Chef Yonatan Roshfeld is a star of the New Israeli culinary scene. His spots Herbert Samuel and Yavne Montefiore are consistently among the top restaurants in Tel Aviv, and he’s got a stubborn commitment to local ingredients and using them with flair. He’s also a man of some mystique who would rather be preparing some deftly deconstructed seafood lasagna or dreamy Wonder Cake (an über-chocolaty take on babka) than dishing to the press, thank you very much. A Moroccan-French mix and to the kibbutz born, he’s pretty much a perfect fit for the jaunty new Alma Lounge restaurant at the eponymous boutique hotel situated in a renovated 1925 Tel Aviv townhouse. Its facade is mint green and cool—Roshfeld’s new menu, on the other hand, is more about heat.
